Preparing a schnitzel takes time and craftsmanship. But in many restaurants, frozen and highly processed meat ends up on the plate. At least 80 percent of restaurants use the offerings from catering suppliers. It's available in the classic version with bacon and onions, vegetarian and even vegan: Flammkuchen is one of the most popular dishes at markets or festivals. Advertised for more than ten euros "fresh from the stone oven". Sebastian Lege knows the trick: Wholesalers supply the base and toppings ready-made for a maximum of two euros per portion. All the restaurants have to do is top the frozen base and operate the oven.
In seconds, a seemingly homemade dish with a dream batch is created. Sauces are the secret stars of German cuisine. Asparagus without hollandaise sauce? Almost unimaginable. But the preparation of sauces is elaborate and complicated. The food industry has recognized this and delivers buckets of them to the kitchens of German restaurants, ready for the microwave. Potato side dishes such as croquettes also traditionally require a lot of work in the kitchen. That's why more and more restaurants are relying on ready-made products from wholesalers. Sebastian Lege shows that industrial croquettes make do without butter, without egg and without fresh potatoes. A portion of these ready-made croquettes costs just 30 cents. The schnitzel is also tricked out - with liquid seasoning and wet breading.
Sebastian Lege invites guests and demonstrates: In just a few minutes, he can effortlessly prepare ten different schnitzel dishes with side dishes - the food industry makes it possible. With its customized products, it has conquered countless restaurants in Germany. Rising costs and a lack of staff are fueling the trend. Restaurants are not required to indicate the use of convenience products on their menus.
