Landfrauenküche Culinary treasures from Lake Constance
In the southwest we go to Linda Kelly. In Herdwangen-Schönach, she lives with her family on a three-generation farm near Lake Constance. With heart and soul, the young farmer is committed to sustainable agriculture. Her motto: What is grown regionally is also more ecological and supports local agriculture. On her farm, she has discovered sweet lupins for herself - a regional legume that has long gone unnoticed as a food. Linda processes the lupine in her small farm manufactory into a variety of products, including pasta + coffee, creating not only a regional alternative to soy products, but also a specialty all her own. A variety of vegetarian lupine recipes land on the plates: crispy lupine protein bread + lupine hummus as a starter. For the main course, three kinds of lupine spelt pasta with cheese and herb sauce + lupine coffee mousse for dessert.
